Seared Fish with Tropical Fruit Salsa
This fish is the perfect summer dinner: light, fresh, and flavorful! The fruit salsa would also taste great with tortilla chips.
Ingredients
10 0z white fish, preferably in thin filets (I used Barramundi)
1 cup diced mango
1 cup diced kiwi (green or golden)
1/2 cup chopped red onion
2 Tbsp cilantro, finely chopped
1/4 tsp salt, plus more to taste
Pepper to taste
2 Tbsp lime juice
Olive oil
Directions
In a small bowl, place the chopped red onion and cover with water. Let it sit for 10 minutes. This will make the raw onion taste less strong.
In a medium bowl, combine the mango, kiwi, red onion, cilantro, and 1/4 tsp salt. Add more salt if necessary.
Pat the fish filets dry with a paper towel. Sprinkle salt and pepper on the flesh side if there is skin, if there is no skin, sprinkle on one side only.
In a large nonstick pan, heat 1 1/2 Tbsp of olive oil. Place the fish seasoning side down, it should sizzle. Leave undisturbed for 3 minutes. After 3 minutes, flip over and cook for 1-2 minutes depending on the thickness of your filets.
Serve the fish with the salsa on top or on the side.
