Summer Fruit Waffles
This recipe for waffles has a special ingredient- chickpea flour! It makes these waffles gluten free and super healthy. While you could eat them with maple syrup, my family enjoys topping them with yogurt, jam, and fruit for a healthier, more filling alternative. Feel free to add whatever toppings you want! This recipe is from the book Always Hungry?, but I have changed the method of making them. My friend is gluten free and we have noticed that chickpea flour has a bean-y taste when used, but the addition of cinnamon masks the flavor. This recipe also easily doubles or triples and you can toast leftovers for the rest of the week to reheat them.
Ingredients
1 cup garbanzo bean flour
1/8 teaspoon salt
3/4 teaspoon baking soda
1 egg
3/4 cup plain yogurt (preferably one with fat)
1/4 cup milk of your choice
1/4 cup canola or avocado oil
1/2 teaspoon vanilla extract
1 teaspoon cinnamon
Toppings:
Chopped strawberries or other fruit
Chia seeds
Yogurt
Walnuts
Cacao Nibs
Optional: Maple Syrup
Directions
Preheat waffle iron. Combine the dry ingredients together in a bowl. Whisk together the egg, yogurt, milk, oil, and vanilla in another large bowl until combined. Add in dry mixture to wet mixture until well combined. The mixture will be thick like muffin or cake batter. Add in batter to fill up your waffle iron, mine uses 1/3 cup batter, but yours might be bigger. Cook until desired crispness.
Spread a layer of yogurt on top of the waffle. Add strawberries and walnuts. Sprinkle chia seeds and cacao nibs on top.
