Za'atar Roasted Delicata Squash
This roasted squash is the perfect edition to a salad and is so easy to make too!
Delicata squash has a wonderful sweet flavor and has thin skin, so there is no need to peel it.
Ingredients
2 medium Delicata squash
1 Tbsp olive oil
1 1/2 Tbsp za’atar
salt to taste
Directions
Preheat oven to 425 degrees.
Cut the squash in half lengthwise and remove the seeds. Cut in half lengthwise again, then slice into half moons a few centimeters thick.
In a bowl combine the sliced squash, olive, za’atar, and salt.
Place the seasoned squash onto a lined baking tray. Bake for 25 minutes, or until squash is soft and some pieced are browned.
