Bæst
A must stop restaurant in Copenhagen is Bæst, which was started by former Noma chef Christian Puglisi. They are known for their sourdough pizzas, along with housemade cheeses and charcuterie. The produce and dairy used in the restaurant are all sourced from Puglisi’s local farm.
We started with the Green leaves with Parmesan emulsion and sourdough croutons. Each leaf was perfectly coated in the savory emulsion and dusted with freshly grated Parmesan cheese. Although a basic salad, it was crisp and fresh and the perfect way begin our meal.
We also ordered the asparagus with pistachio pesto, which was crisp and sprinkled with toasted pistachios. The pesto was savory and nutty and complimented the earthiness of the grilled asparagus.
The selection of BÆST handmade charcuterie, which we ate with sourdough bread, was rich and salty. The house made pickles cut through some of the fattiness, but each type of charcuterie was delicious!
Our first pizza was Bæst’s classic, which had tomato sauce, garlic, oregano, and stracciatella. To start, the dough is incredible—the perfect amount of chew and softness, combined with a tanginess from the sourdough and a delightful aroma of fresh yeast. The tomato was sweet and flavorful, and enhanced by the sprinkling of oregano. One of the favorite parts of this pizza was the Bæst stracciatella, which was so creamy and mixed perfectly with the tomato. I highly recommend this pizza!
We also tried the Bæst mozzerella and ‘nduja, fried potatoes, aioli, smoked paprika pizza, which reminded us of the flavors and components of patatas bravas. I really enjoyed the unique smokiness of this pizza, which paired nicely with the sourdough crust. The potatoes were the perfect amount of crispy, and the aioli on top added the moisture and richness to bring the pizza together.
The last pizza we ordered was topped with smoked BÆST Mozzarella, broccoli , Hindsholmgrisen sausage, and Pecorino Romano. I really enjoyed the smoked mozzarella and the sausage, but I felt that this pizza was not as the good as the previous two. There was slightly too much cheese, which took away from the delicate flavor of the broccoli and sausage.
