Crispy Caramelized Tofu and Cabbage Stir Fry
This is one of my favorite stir fries! The flavor of the caramelized tofu and the fish sauce go so well together, and I love serving it with coconut rice! It’s the perfect quick weeknight dinner.
Ingredients
16 ounces extra-firm tofu, cubed (one package)
2 Tbsp olive oil
2 large cloves garlic, minced
1/2 cup pecans, toasted and chopped
2 Tbsp brown sugar
1 Tbsp fish sauce
3-4 cups (1 lb) green cabbage, sliced into ribbons
1/4 cup cilantro, roughly chopped
Directions
In a large skillet or wok, heat the oil, then sauté the tofu, until golden brown and crisp, about 6-8 minutes. Add the garlic, and cook for another minute. Stir in sugar and fish sauce. Add in the shredded cabbage, and cook until the cabbage has wilted. Remove from heat and stir in cilantro and toasted pecans.
