One-Ripe-Banana Power Cookies
Have you ever found yourself with just 1 overripe banana? It’s not enough to make banana bread, so what should you do? Make these power cookies! They are a great breakfast or snack full with oats, raisins, and flavored with cinnamon.
Ingredients
1/4 cup coconut oil melted
1/4 cup honey
1 cup rolled old-fashioned oats
1 cup quick cooking oats (if you don’t have quick-cooking ones, just pulse rolled oats in a blender or food processor a few times)
2/3 cup raisins
1/3 cup pumpkin seeds
1/3 cup walnuts, roughly chopped
1/4 cup ground flaxseed
1 teaspoon cinnamon
1/2 teaspoon sea salt
1 ripe banana, mashed
2 eggs, beaten
Directions
Preheat oven to 350 F. Line a baking sheet.
In a small bowl warm coconut oil and honey (in the microwave or on the stove).
In a large bowl combine both kinds of oats, raisins, pumpkin seeds, chopped walnuts, ground flax, cinnamon, and salt. Add mashed banana, eggs, and warmed coconut oil and honey mixture. Stir until fully combined.
Drop about 1/4 cup sized scoops of the mixture onto a lined baking tray and flatten (cookies won't spread while baking). Bake for about 15-20 minutes until edges are lightly browned.
