Today I Made: Matcha Mille Crepe Cake
Today I made a matcha mille crepe cake by Just One Cookbook! I have always been attracted to cakes with many layers, but none have as many as a crepe cake. When I saw this recipe for a matcha crepe cake, I knew I had to try making it! I thought the flavor of matcha would pair well with whipped cream to create a dessert that wasn’t cloyingly sweet and also looked pretty.
Prior to making this cake I had never made crepes before. There was a learning curve, but by the end I figured that brushing a little oil onto the pan, then pouring batter, and then finally swirling it worked well. Once it was sufficiently cooked on one side I found that it started to puff up off of the pan on its own and the edges started to come up. I was then easily able to flip it with a large spatula or my fingers. Making the crepes was really fun because as a little girl I always loved to watch the crepes being made at the crepe stand on huge griddles at our local farmers’ market.
The assembly of the cake was very easy and when I finally cut into it, I was amazed by the layers! The cake had a nice matcha flavor, but it wasn’t overpowering because of the flavor of the cream. This cake was really fun to make!
