Today I Made: Soft Sugar Cookies with Raspberry Frosting
Today I made Soft Sugar Cookies with Raspberry Frosting! When I saw these cookies by Eric Kim on New York Times Cooking, I knew I had to make them! Who doesn’t love cute cookies with pink frosting and sprinkles?! Kim wanted to recreate Lofthouse cookies, a supermarket staple. I remember these cookies from elementary school birthday parties - they were always highly coveted by my classmates!
These cookies were so, so good! The cookie part had a delicious vanilla flavor and an almost cake-like texture. The frosting has powdered freeze-dried raspberries in it, which gives both a gorgeous color and tart raspberry flavor. I decided to make a half-recipe of the frosting and even with the half-recipe I had leftovers! If you don’t want to put a lot of frosting on your cookies, I would make a 1/2 recipe of the frosting.
