Tomato, Basil, Mozzarella Salad
This is one of the best salads you can eat during the summer! With juicy tomatoes and fresh basil, this salad is refreshing and delicious. I like to eat on a toasted piece of rosemary bread for lunch. I use ciliegine mozzarella in this salad. They are small balls of mozzarella that I quarter for the perfect size. If you just have a large ball of mozzarella, that works fine as well! Also, letting the tomatoes and salt sit for 5 minutes allows the tomatoes to release some of their juices. When they are mixed with the olive oil, it creates a delicious dressing that you can spoon on top of bread!
Ingredients
2 heaping cups tomatoes, chopped
3/4 cup chopped mozzarella
1 1/2 Tbsp olive oil
2 Tbsp basil, finely sliced
Salt and Pepper to taste
Directions
In a medium sized bowl, add the tomatoes and add 1/4 tsp salt. Let them sit for about 5 minutes while prepping the rest of the ingredients. Then, add mozzarella, olive oil, and basil. Mix to combine. Add salt and pepper to taste. Serve.
