Sliced Tomato Salad with Pine Nuts, Feta, and Pomegranate Molasses
This tomato salad highlights the best of late summer produce. It’s a refreshing change from the usual tomato, basil, and mozzarella summer salad. For this salad, the tomatoes are juicy and fresh, the pine nuts add a toasty, savory flavor, the feta is sharp, and the pomegranate molasses adds an unexpected fruity sourness that ties the dish together! Having ripe, flavorful tomatoes is super important because they are the backbone of the dish.
Ingredients
3 medium heirloom tomatoes
1/4 tsp salt
Pinch of pepper
1/4 cup feta
Scant 1/4 cup of pine nuts
1 Tbsp Italian flat leaf parsley
1 1/2 tsp pomegranate molasses
1 Tbsp olive oil
Directions
Toast pine nuts on medium heat until golden brown and fragrant.
Slice the tomatoes into 1/4 inch rounds. Lay them on a large plate, overlapping them slightly. Sprinkle with the salt and pepper. Crumble the feta on in an even layer. Sprinkle the toasted pine nuts and parsley, then drizzle with the olive oil and pomegranate molasses.
