Eetch Pilaf
Eetch pilaf is an Armenian dish made of bulgur, tomatoes, onions, and parsley. It’s tangy, refreshing, and a really light dish. My mom has been making this for as long as I can remember!
Bulgur comes in different sizes of grinds. This one uses #1 bulgur, which is the finest one. The bulgur cooks like couscous; it absorbs water off heat. It is extremely important to use the right grind size, otherwise this salad won’t work.
Ingredients
1 medium onion, finely chopped
1/4 cup + 1 Tbsp olive oil
1 cup #1 bulgur
3/4 cup water
1/2 cup tomato paste
5 scallions, finely chopped
1 bunch Italian flat leaf parsley, finely chopped
4 tomatoes, diced
1/2 cup lemon juice
1/2 tsp paprika
1/2 tsp salt
1/4 tsp cayenne pepper
Directions
Saute the onion in 1 Tbsp olive oil in a medium saucepan (that has a lid) until translucent. Add in the bulgur and stir. Add water, cover the pan, take off heat and let it stand for 10 minutes. After 10 minutes, add in the 1/4 cup olive oil, tomato paste, lemon juice, salt, paprika, and cayenne pepper. Move bulgur mixture to a large bowl and add the rest of the ingredients. Mix gently to combine.
